Hello, again

Oops, I did it again!

Nope, I’m not listening to Britney Spears. I’m just returning from another long ‘virtual absence’ for… (checking the date of my last post)… almost 3 years! 😛

The reason being me being occupied with some freelance writing projects in the beginning, followed then by two full-time jobs over the past 2 years.

When the whole of your day is spent in front of the computer dealing with words, typing, reading and editing, really,  there’s no single drop of brain juice left at the end of the day to update the blog.

Obviously, I’m no longer in a 9-to-5 daily grind now, that’s why I suddenly remembered of this blog! Haha!

I will try not to repeat this erratic behaviour (hmm, I think I have said this before), again.

And as a ‘return gift’, haha, I will present to you my short-cut pizza recipe right after this. 😉

Homemade peanut butter cookies recipe for Christmas

Peanut butter cookies is always a favorite in any occasions. If you are looking for a homemade peanut butter cookies recipe to serve your guests (or just for your own indulgence) this Christmas, this is an easy one, taken from the Big Book of Cookies. It’s called Double Peanut Cookies. Enjoy!

Ingredients
——
1 cup creamy peanut butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
1/2 cup butter or margarine — softened
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 cups chopped unsalted dry-roasted peanuts

Method
——
1. Heat oven to 375ºF (~190ºC). Beat peanut butter, sugars, butter and eggs in large bowl with electric mixer on medium speed, or mix with spoon.

2.Stir in flour and baking soda. Stir in peanuts (dough will be stiff).

3. Drop dough by rounded tablespoonfuls about 2 inches apart onto
ungreased cookie sheet.

4. Bake 8-10 minutes or until light brown.

5. Cool for 1-2 minutes; remove from cookie sheet to wire rack.

Peanut chocolate chip cookies recipe

It’s less than 3 weeks to Christmas. For housewives who are celebrating this festive, I’m sure you all are busy hunting for all sorts of recipes now. You cannot afford to celebrate Christmas without a good serving of cakes and cookies, can you? So here’s a recipe for peanut chocolate chip cookies (covered with more chocolate!) that I found from a book. I have not tried it, but it’s simple so I think it’s worth sharing the recipe here.

Chocolate-covered peanut chocolate chip cookies

Ingredients

1 cup sugar
1/2 cup butter or margarine — softened
1/2 cup shortening
1 teaspoon vanilla
1 egg
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate-covered peanuts
1 cup milk chocolate chips

Method
——–
1. Heat oven to 375ºF (~190ºC). Beat sugar, butter, shortening, vanilla and egg in large bowl with electric mixer on medium speed, or mix with spoon.

2. Stir in flour, baking soda and salt. Stir in peanuts and chocolate chips.

3. Drop dough by rounded tablespoonfuls about 2 inches apart onto
ungreased cookie sheet.

4. Bake 10 to 12 minutes or until edges are golden brown (centers will be soft). Cool 1 to 2 minutes; remove from cookie sheet to wire rack.
